Ingredient number one – Bananas.
That’s it.
I’ve never done a food blog post before but when I first made this I knew I’d have to share it. It’s utterly gorgeous, totally healthy and super easy. All you’ll need is bananas, a freezer and a food processor or good blender of some sort.
4 Bananas will make more than enough for 2 people.

Peel your bananas.

Cut into coins and put the banana onto a plate that you’ve lined with greaseproof paper.

A little tip is to lay the banana coins out in a bit of a higgledy piggledy fashion rather than laying them flat.. it’ll make getting them off the plate easier later when frozen.

Pop onto the freezer. And leave them in for at least 2 hours. You want them to be pretty solid when you take them out.

To loosen the banana, pull the paper up from the edge of the plate and work into the centre. The banana should start to come loose.

Pop all of the coins into the blender.

Whizz!

At first it’ll start to look like cous cous. Keep blending.

It may start to stick, so if it looks stuck, open the lid and using a wooden spoon or spatula scrape the sides of the bowl and work the mixture down toward the blade. Continue blending.
KeepĀ blendingĀ and trust me, it’ll soon start to whip up and turn into gorgeous whippy icecream! When it looks like this, you’re done.

Spoon it into little bowls and eat it!

This will be the healthiest banana ice cream you’ve ever had. If you want to spruce it up you could try adding peanut butter, honey, berries or anything else in during the mixing stage. Try it!

Thanks for the comments everyone. I should do more food blogs!
Dee – I’m afraid the last batch is about to be gobbled by Ian and Eve.. sorry about that.
Ruth – Your eyes do not deceive. It is indeed YUM!
Dave – If you have biceps like Arnie, a masher could work.
Dik – With pancakes it makes the perfect breakfast. You can put vodka on yours if you wish…
Noel & Aga – Yes indeed. Here goes. 127 Hours – Brilliant, gruesome, inspirational.

I like the way you’ve combined cookbook instructions with good photography. Jamie will be in touch about his next book…
